Recipe Box: Shrimp and Cheese Grits
Have you ever just wanted grits for dinner but didn't want to include all the other breakfast items with it to complete the meal? Well, I'm here to help you out with this quick and easy shrimp and cheese grits recipe using a few ingredient that you probably already have at home give or take one or two items. Here's how to make it:
Shrimp and Cheese Grits
Serves 4
Ingredients
Salt and pepper
1 cup grits
3 tablespoons butter
2 cups shredded sharp cheddar cheese
1 pound shrimp, peeled and deveined
6 slices bacon, chopped
4 teaspoons lemon juice
2 tablespoons chopped parsley
1 cup thinly sliced scallions (can substitute yellow onion or green onions if you have no scallions available)
1 large clove garlic, minced
Directions
1) Cook grits according to directions on packaging -- Bring water to a boil. Add salt and pepper. Add grits and cook grits according to the directions on the packaging
2) Once water is absorbed - remove from heat and stir in butter and cheese - remove from eye and cover to keep warm
3) Meanwhile, rinse shrimp and pat dry.
4) Fry the bacon in a large skillet until browned; drain well.
5) In grease, add shrimp. Cook until shrimp turn pink (you can substitute butter if you don't want to use the bacon grease)
6) Add lemon juice, chopped bacon, parsley, scallions/onions and garlic to shrimp in frying pan -- Sauté for 3 minutes.
7) Spoon grits into a serving bowl.
8) Add shrimp mixture and mix well.
9) Serve and enjoy
