Spicy Shrimp Linguine with Vodka Sauce 

Serves 4

Ingredients
9oz linguine
3/4 lb large shrimp, peeled and deveined
4 large garlic cloves, minced 
1/4 cup vodka
1 1/2 cup reduced sodium jarred arrabbiata or spicy marinara sauce 
1/4 cup small fresh basil leaves 
1 tablespoon extra-virgin olive oil
1/8 teaspoon salt and pepper


Directions
1) Bring a large pot of water to a boil. Cook pasta according to package directions and drain, reserving 1/4 cup cooking water.
2) Heat 1 tablespoon extra-virgin olive oil in a 12-inch nonstick skillet over medium-high heat. 
3) Season shrimp with 1/8 teaspoon salt and pepper to taste. 
4) Add shrimp to skillet in a single layer and cook, undisturbed, 1 minute. Flip and add garlic, sautéing 1 minute more than transfer to a plate.
5) Carefully add vodka to pan and cook 1 minute then add arrabbiata or spicy marinara sauce and bring to a simmer.  
6) Once sauce is simmering, add drained pasta, reserved shrimp and juices, basil and 3-4 tablespoons reserved cooking water.
7) Toss well to combine and heat through. 
8) Divide among four serving bowls and garnish with additional basil if desired.
9) Serve and enjoy!
