Recipe Box: Homemade Chicken Alfredo Pizza


Once again, I've decided to try my hand at pizza making and this time I wanted to use chicken. To find out how to make the above pizza, just continue reading.

Homemade Chicken Alfredo Pizza 

Ingredients
1 pizza crust (I used Mama Mary's stone fired brick oven style pizza crust)
Olive oil
7oz Alfredo sauce (I used Classico Roasted Garlic Alfredo Sauce)
Italian seasoning
1 large boneless skinless chicken breast
½ cup chopped red onion
½ cup chopped green pepper
3 whole baby Portobello mushrooms
8 sliced grape tomatoes 
½ package of Italian style shredded cheese 
½ package Colby & Monterey Jack shredded cheese 


Directions
1) Lightly coat skillet in olive oil and preheat on medium heat
2) Place thawed chicken breast into skillet and cook turning occasionally until chicken has started to brown or until juices run clear when the thickest part of the chicken breast is pierced
3) While chicken cooks slice the other ingredients
4) Lightly brush pizza crust with olive oil
5) Spread Alfredo sauce evenly onto crust
6) Sprinkle Italian seasoning over crust


7) Remove cooked chicken breast from skillet and allow to cool for a few minutes 
8) Once chicken breast has cooled, dice into medium sized chunks 
9) Top crust with ingredients - my usual order of toppings goes as follows: meat, veggies then cheese 




10) Preheat oven to 400 degrees
11) Bake on oven rack for crisper crust or on a cookie sheet for a softer crust (middle position) for 15 minutes 
12) Serve and enjoy
