Recipe Box: Crustless Mini Quiches


Crustless Mini Quiches 

Serves 12 

Ingredients 
1 can (12 fl oz) evaporated milk
3 large eggs, beaten
2 tablespoons all-purpose flour
¼ teaspoon salt
¼ teaspoon ground black pepper
2 cups (8 oz.) shredded mild or sharp cheddar cheese
½ cup chopped red bell pepper
½ cup chopped green pepper
½ cup chopped yellow onion
½ cup chopped portobello mushroom
½ cup cooked bacon, crumbled


Directions
1) Preheat oven to 350° F.
2) Grease and lightly flour twelve 2 ½ inch muffin cups.
3) Whisk evaporated milk, eggs, flour, salt and black pepper in medium bowl until blended.
4) Stir in cheese, bell peppers, yellow onion, mushrooms and bacon.
5) Stir mixture until ingredients are evenly distributed.
6) Spoon up to 1/3 cup of mixture into each prepared muffin cup.
7) Bake for 23 to 28 minutes or until knife inserted near centers comes out clean and tops are lightly browned.
8) Let cool in muffin cups for 15 minutes then run a knife or small, flat spatula around inside edges of muffin cups and carefully remove.
9) Serve and enjoy!
