Recipe Box: White Rice Medley
White Rice Medley
Serves 4
Ingredients
2 cups cooked rice
1/2 cup fresh cut sweet peas
1/2 cup julienne carrots
1/2 cup fresh diced red peppers
1 tbsp butter
Directions
1) Cook rice according to package directions.
2) While rice cooks, dice red peppers and julienne carrots.
3) Melt butter in a skillet over medium heat.
4) Add sweet peas, red peppers and carrots to skillet and cook on low heat for 5 minutes or so (you just want the veggies to soften a little).
5) Add cooked rice to skillet with veggies and stir - let heat for a few minutes.
6) Remove from heat.
7) Serve and enjoy!
I originally made this side dish to go with pot stickers (see below) but this dish can also go great with other Asian style meat entrees or just a meat entree in general.
