Recipe Box: Peach Salsa


It's peach season so why not make peach salsa? This recipe is so simple and it only requires a little chopping and mixing. While you can serve it right way, I think it tastes better after it has set for a while and the ingredients have had time to marinate together. The heat of this salsa can be adjusted to your liking by adding additional jalapeno peppers and ground black pepper. Just remember to use ripe peaches. All ingredients listed below. 

Peach Salsa

Ingredients
1 ½ cups diced ripe peaches (4-6 depending on size)
1 cup diced tomato (about 2 medium size)
2 whole diced jalapeno pepper
¼ cup diced red onion
1 tablespoon dried cilantro
1 tablespoon lime juice
Pinch of salt and freshly ground black pepper  

Directions
1)      Mix all ingredients together well
2)      Serve right away or cover and refrigerate until ready to serve

I’ve eaten this salsa with chips as well as over a grilled pork chop with a side of orzo (pictured below).
