Recipe Box: Spanish Rice Casserole


Okay, so I know that this isn't the most photogenic dish but looks can be deceiving - or to put it another way, it tastes WAY better than it looks! Now I know that spanish rice is usually a side dish but I decided to think outside of the box and turn this side dish into a meal. Here's how to make it:

Spanish Rice Casserole

Ingredients
Zatarain's Spanish rice mix
14.5 oz can of diced tomatoes
15.25 oz can of whole kernel corn
15.25 oz can of black beans
1 lb of ground beef
1 package of taco seasoning
1-2 cups of shredded cheddar cheese


Directions
1) Cook Spanish rice according to the directions on the package
2) Preheat oven to 350 degrees
3) Cook ground beef in skillet until brown, drain, then add taco seasoning following the directions on the package
4) Mix rice, ground beef, corn and black beans together
5) Place mixture in a casserole dish and spread out evenly
6) Top mixture with cheese and place in oven for 10 minutes or until cheese is melted
7) Remove dish from oven
8) Serve and enjoy


TIP: So that the rice wasn't too sticky or turned into a mushy mess, try cooking rice the night before and refrigerating
