Recipe Box: Peanut Butter Pancakes

I'm a huge fan of peanut butter. Besides using it as a part of a PB&J sandwich I also enjoy eating it by itself, as a dip for fruit and vegetables and recently I've tried it in my pancakes just on a whim. If you'd like to know how I made the pancakes below, just continue reading.


Peanut Butter Pancakes

Serves 2 
(6-8 pancakes)

Ingredients
1 cup complete buttermilk pancake mix
4 tbsp creamy peanut butter spread 
2 tbsp peanut butter chips*
3/4 cup water
4 tbsp vegetable oil spread 
Syrup

Directions
1) Heat skillet or griddle over medium heat and lightly coat with vegetable oil spread.
2) Combine pancake mix, water and creamy peanut butter spread in bowl - stir until there are no large lumps of pancake mix.

FYI: Batter will be thick due to the peanut butter spread, if it's too thick for your liking just add more water.

3) Pour about 1/4 cup of batter for each pancake onto the hot skillet or griddle.
4) Cook pancake on each side until golden brown.
5) Once all pancakes are cooked, stack on plate and sprinkle with peanut butter chips.*
6) Serve and enjoy!
