Recipe Box: Potatoes and Sausage
Are you in need of a hearty quick and easy meal? This dish is just what the doctor ordered. Here's how to make it:
Potatoes & sausage
Serves 4
Ingredients
Garlic (1/2 tsp)
Oregano (1 tsp)
Parsley (1 tsp)
Sea salt (1/4 tsp)
Ground pepper (1/2 tsp)
Thyme (1/2 tsp)
Bacon grease (1/8 cup or the grease from 2 slices of cooked bacon)
Potatoes (2 medium sized baking potatoes)
Smoked sausage (Bryan smoked sausage 7oz or one of the two links)
One cup diced onion, red and green peppers -- peppers are optional -- you can just use half a cup of diced onion
OPTIONAL: red or green peppers

Directions
1) Remove sausage from packaging, cut into slices and place in frying pan for cooking - cook until slightly brown

2) While sausage is cooking, peel potatoes and wash
3) Dice potatoes and place pieces in a mixing bowl
4) Add remaining ingredients to mixing bowl with potatoes and mix well
5) Remove sausage from frying pan and place potatoes into pan -- grease from sausage can be removed before adding potatoes or you can leave in pan for additional flavoring
6) Cook potatoes until golden brown and tender
7) Add smoked sausage back into pan and mix in with potatoes
